Oven Roasted Chicken Paprika and Cauliflower with Lemon, Capers and Parmesan
Juicy, tender chicken is always within reach with our secret ingredient: our easy to make paprika, thyme and salt paste. Melted Earth Balance® Natural Buttery Spread with Olive Oil binds the spices together while adding rich buttery flavor to the chicken. We also tossed cauliflower in melted Earth Balance® Natural Buttery Spread with Olive Oil and oven-roasted until golden and caramelized.
Serves 4
6 Tbsp. melted Earth Balance® Natural Buttery Spread with Olive Oil, divided
3 Tbsp. paprika
2 Tbsp. sea salt
1 Tbsp. dried thyme
4 (6-oz) boneless, skinless chicken breasts
1 large head cauliflower, cored and cut into florets
Juice and zest of two lemons
2 Tbsp. capers
2 Tbsp. grated Parmesan cheese
Salt and freshly ground black pepper


Preheat oven to 375F. Mix together 4 tablespoons melted Earth Balance® Natural Buttery Spread with Olive Oil with paprika, salt and thyme. Rub liberally over each chicken breast. Place breasts on a parchment paper-lined baking sheet and bake 35 to 45 minutes, until they reach 165F. Let chicken rest 10 minutes before serving.

Place cauliflower florets on a parchment paper-lined baking sheet. Toss with 2 tablespoons melted Earth Balance® Natural Buttery Spread with Olive Oil and sprinkle with salt. Roast 30 minutes, stirring once, until lightly browned around the edges.

Mix together lemon juice and capers. Add cauliflower and mix well. Top with parmesan cheese.
